　　Starch has feature of a big aggregation of amylose, lower gelatinating temperature, high viscosity, excellent elasticity, low protein content, no irritancy, more whiteness than other starch and not easily degeneration and so on. \Purpose: Using fresh potato or cassava (tapioca) to produce starch for food and industries use.
